Greek Red Lentil Soup
- ½C. Red Lentils
- ½ An Onion
- 1 Carrot
- 1Can Tomato Sauce
- ¼Tbsp Powdered Cumin
- ¼Tbsp Whole Rosemary
- ¼Tbsp Crushed Oregano
- 1 Whole Bay Leaf
- Water
Instructions
Chop the onion and carrot into small pieces. Heat up the pot you will use and add a couple Tbsp of olive oil. Fry the onion and carrot till they have some brown. Add all the spices and tomato sauce and fry a few more minutes.
Add about 2 or 3 Cups of water into the pot along with the lentils. Can add chicken stock instead.
Takes about 10-15minutes of simmer time. Add more water if it looks too thick. Salt to taste.
