Carne Guisada

  • 2lb Stew Beef
  • 1 Yellow Onion
  • 1 Bell Pepper
  • 2 Roma Tomatoes
  • 2tsp Ground Cumin
  • 1tsp Ground Pepper
  • 2Tbsp All Purpose Flour
  • 3 Cloves Minced Garlic
  • 2C. Chicken Stock

Instructions

Dice the onions, bell pepper, and tomatoes.

In a sauté pan, on medium heat, start frying the onions in a little oil till translucent.

Add bell pepper to sauté pan.

Fry for another 3minutes then add tomatoes and garlic.

Fry till most of onions have some brown to them then add cumin and pepper. Fry a couple more minutes. Remove to a separate bowl.

Add meat to pan with a little oil. Brown meat on high heat.

Add vegetables from the bowl back into the pan with the meat. Add flour and stir in. Add chicken stock. Stir together. Let simmer on low covered about an hour or till meat is tender. May need to add a cup of water and stir occasionally.
